THIRSTY THURSDAY
Our most recent snowstorm left many of us stuck and snowed in at home, including your favorite Wine Guy. However, to make up for missing Tasty Tuesday I’m sending out an email this Thursday to talk about one of Italy’s most influential producers.
The COS winery was founded in 1980 by three friends, Giambattista Cilia, Giusto Occhipinti, and Cirino Strano. The initials of their last names form the winery’s name. Based in Vittoria, Sicily, these wines have come to shape the global understanding and appreciation of Italian wine and natural wine production. Having been early adopters of Biodynamics in 2000, and registered organic since 2007, COS has never used any synthetics or chemical additives in their vineyards. Their purpose being to convey the transparency of the soil into their final wines as best as possible.
Here at the Italian Market, we currently carry the COS Cerasuolo di Vittoria Classico “Delle Fontane”, and the “Contrada” Nero D’avola.
- COS Cerasuolo di Vittoria “Delle Fontane”: a blend of Frappatto and Nero D’avola that is vibrant and complex. It shows notes of raspberry, cherry, and pomegranate fruits, with an underlayer of tobacco, leather, and dried flowers. ($45.99)
- COS “Contrada” Nero D’Avola: a definitive expression of Sicily’s most important red grape. Black cherry, blackberry, and smoked herbs dominate this wine, complimented by savory elements of leather and earth. ($48.99)
